MICROWAVE CHEESECAKE





This is such a decadent treat and you can make so make variations using different toppings and changing the flavour of biscuit.

What You'll Need:

4 Gracious Bakers Biscuits of your choice, crushed

1 tbsp melted butter

150g cream cheese

1 egg, large

2 tbsp powdered erythritol

½ tsp vanilla extract

½ tsp lemon juice

1 tsp lemon zest

Berries or sugar free jam for garnish


Method:

Method:

1. Mix the crushed biscuits and butter and push them into the bottom of two greased ramekins or mugs.

2. In a bowl, mix all the other ingredients with a fork or a whisk. Whisk until there are no lumps.

3. Add to your ramekins and microwave separately on high for 1 minute. The top should be glossy and center still jiggly.

4. Microwave for another 20 seconds. Then allow to cool on the counter for 10 minutes before placing in the fridge for at least 1 hour.

5. Eat straight from the ramekin or invert onto a plate and decorate with berries or sugar free jam.
