CARROT CAKE





The perfect cake for your Easter Celebrations or even just a great tea time treat without the guilt.

What You'll Need:

1 Box Gracious Bakers Vanilla Instant Porridge

3 Eggs

60g melted butter

120ml cream

60ml water

1 ½ tsp ground cinnamon

1 cup grated carrot

40g chopped walnuts


For the frosting:

225g cream cheese softened

½ cup butter softened

¼ cup powdered erythritol

4 tbsp cream

1 tsp vanilla extract

More walnuts for decorating


Method:

  1. Preheat oven to 180C.

  2. Line a loaf pan with baking paper.

  3. Beat the eggs in a large bowl. Add butter, cream, water and cinnamon and mix well.

  4. Slowly mix in your Gracious Bakers Vanilla Porridge until you get a batter consistency.

  5. Stir in the grated carrot and walnuts until well combined.

  6. Pour into your loaf pan and bake for 40-50 minutes until done. Remove from the oven and allow to cool completely while you make your frosting.

  7. Cream your butter and cream cheese together until smooth. Add erythritol and vanilla and continue to mix.

  8. Add the cream 1 tbsp at a time while mixing until the frosting becomes nice and fluffy.

  9. Spread frosting on top of you completely cooled cake, decorate and serve.
